Was the only change subbing the vodka for the tequila? Cause I can see that being delicious.

Also as an aside I recomment a shot of akuavit/brennivin/some carraway flavor giniver in chili etc.

Also making your own italian herb infusions with thyme, rosemary, red pepper, sage, and basil, and using that. O but what fun there is to be had.

It wasn't the only substitute. I also subbed Crema for the Heavy Cream, and changed the spice/herb profile to be Mexican instead of Italian. I also sauteed bell peppers along with the onion and garlic at the beginning, and through in Roman Beans, which were the only beans I saw that mentioned both Hispanic food and Italian food on the back of the can. They worked quite well.

Apparently they are a variety of cranberry bean, which is Columbian, and are also known as berlotti beans, used by Italians, Spanish, and Portugeuse.
