So I made adobo last night. For any Filipino wondering what I used, I used 3 pounds of meat (1 chicken, 2 pork), 2/3 cup soy, 2/3 cup white vinegar, 2 tsp sugar, and 3 Tbsp garlic. And some pepper.

It didn't turn out as pictured. The sauce was really good but in pictures it looks like there's some caramelization of the sauce onto the meat, or the meat gets sort of a crisp thing around it. I wish mine had done that. But I kinda rushed... I know I should've thawed it and then marinated it for 24 hours but I really wanted to make it that night. So I basically put semi-thawed meat into the sauce and heated it up. What can I say... Jess was in the living room with 2 crying babies and I didn't want to delay.

Adobo is delicious. My girlfriend's mom stayed with us for a weekend and it was all we ate.

My new favorite Filipino dish is dinuguan, though. Pork parts served in a pork blood. Oddly amazing.

Used to make it a lot for parties, especially for my Tagalog classmates. Delicious and simple and everybody loves it all the time.

Nice. I make something similar, just as a throw-together- white chicken, some soy, vinegar, and random veggies to stir fry, thrown on rice. It turns out pretty well. Never used the sugar though... interesting concept. Sugar is a pain in the ass to caramelize without problems though, so I wouldn't count it against a person for not having it come out perfect (I'd be scared to try it)
