Yesterday, I decided it would be fun to cook for my host family here in France, and cook some enchiladas. It was very successful, but that's not the point. It's also very hard to find ingredients we take for granted in the US, like anything related to mexican cuisine. That's not the point either.
The point is, that very night I had a dream where I was in a department store and there was a tv where a lot of people were gathering to cheer on and spectate the annual Great Burrito Race, which was an event wherein two men race against one another, each with an enormous burrito strapped to their back. The people were really into it, and I was even a little cross with myself for arriving so late to see the race.
Despite how stupid this was, I'm actually a little disappointed it doesn't exist. Imagine it. Every year, some kind of great tradition like that. Too bad I guess.

I'm glad it's such a popular idea here. In fact, I think if it's such a hit here, it can easiliy take off in the world.
As for the recipe, well, there was no enchilada sauce here. So I made it from tomato sauce, water, flour, some chilis and onion and garlic. There's also not spanish rice I think but that's easy enough to make if you utilize a can of salsa. Also there's no such thing as mexican cheese but I used a mix of comte and cantel which wound up actually being rather close to mexican cheese mix (I had help from a friend in substituting those cheeses).
Other than that, it was pretty much the same.
